LEFSE

- [Norwegian] A thin, flat potato pancake, about the consistency of a tortilla and cooked by similar method. Very mild, starchy, slightly sweet taste. Lefse is enhanced by the addition of peanut butter, brown sugar or lutefisk.
- Lefse (pronounced lef-sa) is a traditional soft Scandinavian flatbread made out of potato, milk and flour, and cooked on a griddle. There are significant regional variations in the way lefse is made and eaten, but it generally resembles a tortilla.
